Creamy Tomato Pasta with Ground Beef
A comforting Italian-inspired pasta dish with a rich, creamy tomato sauce and lean ground beef that's a guaranteed hit with the kids.
Before you start
Cook 4 cups of pasta for this meal, reserving 2 cups of cooked pasta for Tuesday's dinner.
Cooking instructions
- Cook pasta according to package directions. Drain, reserving 2 cups for Tuesday's meal, and set aside.
- Meanwhile, heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain excess fat.
- Add diced onion and minced garlic to the skillet and cook until softened, about 3-5 minutes.
- Stir in diced tomatoes, tomato paste, broth, and oregano. Bring to a simmer and cook for 10 minutes, allowing flavors to meld and sauce to thicken.
- Reduce heat to low, stir in heavy cream/milk and Parmesan cheese. Add the cooked pasta to the sauce and toss to combine. Season with salt and pepper to taste.
- Serve hot, with extra Parmesan on the side for those who like it.
