One-Pot Lemon Herb Chicken Pasta
A quick and comforting pasta dish packed with tender chicken, spinach, and a bright lemon-herb sauce, all cooked in one pot for easy cleanup.
Before you start
Dice 1.5 lbs chicken breast into 1-inch pieces. Use 1 cup frozen spinach for convenience, adding it directly to the pot.
Cooking instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until lightly browned, about 5-7 minutes. Add minced garlic and cook for 1 minute more.
- Pour in chicken broth, add uncooked pasta, oregano, salt, and pepper. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
- Stir in the juice of half a lemon and the frozen spinach. Cook, uncovered, for 2-3 minutes until spinach is wilted and heated through.
- Remove from heat. Stir in Parmesan cheese. Taste and adjust seasoning as needed.
- Serve immediately, garnished with fresh parsley and an extra squeeze of lemon, if desired. Kids can add Parmesan to their liking.
