One-Pan Creamy Tomato Chicken Pasta
A comforting pasta dish with tender chicken and a luscious tomato sauce, all cooked in one pan for easy cleanup. A family favourite that's simple and satisfying.
Before you start
Dice chicken breast into 1-inch pieces and chop onion and garlic before you start cooking to save time.
Cooking instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook until lightly browned, about 3-4 minutes. Remove chicken and set aside.
- Add onion to the skillet and cook until softened, about 3 minutes. Stir in garlic and tomato paste and cook for 1 minute until fragrant.
- Pour in diced tomatoes and chicken broth. Bring to a simmer, then add the pasta.
- Return chicken to the skillet. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed. If needed, add a splash more broth.
- Stir in cream cheese until melted and smooth. Fold in fresh spinach until just wilted.
- Season with salt and pepper to taste. Serve hot.
