One-Pot Italian Sausage & Pepper Pasta
A comforting Italian-inspired pasta dish with savory sausage and sweet bell peppers, all cooked in one pot for easy cleanup. It's a simple classic that even picky eaters will enjoy.
Before you start
Dice 1 onion and 2 bell peppers (any color) on Sunday to save time on Monday. Cook 1 cup extra pasta beyond the recipe for Thursday night if not making rice.
Cooking instructions
- Remove sausage from casings (if applicable). Heat olive oil in a large pot or deep skillet over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add diced onion and bell peppers to the pot and cook until softened, about 5 minutes. Mince garlic and add to the pot, cooking for 1 minute until fragrant.
- Stir in crushed tomatoes, broth, pasta, oregano, and a pinch of salt and pepper. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally to prevent sticking, until pasta is al dente and most liquid is absorbed.
- Remove from heat and let sit, covered, for 2-3 minutes. Stir in fresh parsley.
- Serve hot, topped with optional Parmesan cheese. For picky eaters, offer cheese on the side.
