Creamy Tomato Lentil Pasta
A pantry-friendly pasta dinner with red lentils simmered into a gentle tomato sauce.
Cooking instructions
- Cook pasta in salted water until just tender, then reserve 1 cup pasta water and drain.
- Warm olive oil in a large pot over medium heat, then cook onion for 4 minutes until soft.
- Add garlic and lentils, stir for 1 minute, then add crushed tomatoes, broth, and salt.
- Simmer for 15 to 18 minutes, stirring often, until lentils are soft and the sauce thickens.
- Stir in milk or cream, parmesan, and cooked pasta. Add reserved pasta water a little at a time if the sauce needs loosening.
- Taste and adjust salt before serving.
