Creamy Tomato Lentil Pasta

A pantry-friendly pasta dinner with red lentils simmered into a gentle tomato sauce.

Cooking instructions

  1. Cook pasta in salted water until just tender, then reserve 1 cup pasta water and drain.
  2. Warm olive oil in a large pot over medium heat, then cook onion for 4 minutes until soft.
  3. Add garlic and lentils, stir for 1 minute, then add crushed tomatoes, broth, and salt.
  4. Simmer for 15 to 18 minutes, stirring often, until lentils are soft and the sauce thickens.
  5. Stir in milk or cream, parmesan, and cooked pasta. Add reserved pasta water a little at a time if the sauce needs loosening.
  6. Taste and adjust salt before serving.
