One-Pot Sausage & Tomato Pasta
A comforting, easy one-pot pasta dinner featuring mild Italian sausage and a simple tomato sauce, perfect for a busy start to the week.
Before you start
Chop the onion and garlic at the start of the week. Cook 1 cup extra pasta for a quick lunch later.
Cooking instructions
- In a large pot or deep skillet, remove sausage from casings and brown over medium-high heat, breaking it up with a spoon. Drain excess fat if needed.
- Add olive oil, chopped onion, and minced garlic to the pot. Sauté until onion softens, about 3-5 minutes.
- Stir in crushed tomatoes, broth, pasta, salt, and pepper. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is al dente.
- Stir in fresh spinach and cook until wilted, about 2 minutes.
- Remove from heat and let sit for a few minutes to allow sauce to thicken slightly.
- Serve hot, topped with optional Parmesan cheese.
