One-Pot Tomato & Sausage Pasta
A comforting Italian-inspired pasta dish with mild sausage and tomatoes, all cooked in one pot for minimal cleanup. Kids will love the familiar pasta and sausage combination.
Before you start
Dice 1 onion and 1 bell pepper on Sunday night (5 min) to make Monday’s prep even faster. Use 1 can of crushed tomatoes.
Cooking instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Remove sausage and set aside, leaving a little fat in the pot.
- Add diced onion and bell pepper to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Return sausage to the pot. Stir in crushed tomatoes, broth, pasta, salt, and pepper. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until pasta is al dente and most liquid is absorbed, stirring occasionally.
- Remove from heat and let sit for a few minutes. If desired, stir in a handful of fresh spinach (not listed as essential, but an easy addition) to wilt.
- Serve hot, garnished with fresh parsley if using. Encourage kids to pick their favourite pieces.
