One-Pot Beef & Zucchini Pasta
A comforting Italian-inspired pasta dish made in one pot, featuring ground beef, tender zucchini, and a simple tomato sauce. It's a family classic that's easy to clean up.
Before you start
Dice the zucchini and onion on Sunday evening to speed up Monday's dinner prep. Consider buying a larger pack of ground beef at Costco and freezing half for later in the week.
Cooking instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground beef and onion, breaking up the beef with a spoon, and cook until browned, about 5-7 minutes. Drain any excess fat.
- Stir in diced zucchini, crushed tomatoes, beef broth, pasta, oregano, salt, and pepper. Bring to a boil.
- Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally to prevent pasta from sticking, until pasta is al dente and most liquid is absorbed.
- Remove from heat and let stand for 2-3 minutes. The sauce will thicken slightly.
- Serve hot, topped with grated Parmesan cheese. Offer extra cheese on the side for kids.
