One-Pan Lemon Herb Chicken & Orzo

A bright and cozy one-pan pasta dish with tender chicken, orzo, and fresh lemon-herb flavour that kids will love.

Before you start Use chicken breasts or thighs from your freezer stash. While the chicken cooks, prep your lemon zest and juice, and chop fresh herbs for a quick finish.

Cooking instructions

  1. Slice chicken into 1-inch pieces. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt, pepper, garlic powder, and oregano. Sear chicken until golden brown, about 3-4 minutes per side. Remove chicken and set aside.
  2. Add orzo to the same skillet and toast for 1-2 minutes until lightly golden. Pour in chicken broth and bring to a simmer. Scrape up any browned bits from the bottom of the pan.
  3. Return chicken to the skillet, nestling it into the orzo and broth. Reduce heat to medium-low, cover, and cook for 10-12 minutes, or until orzo is tender and most liquid is absorbed. Stir occasionally to prevent sticking.
  4. Remove from heat. Stir in the zest of the lemon and half of the fresh lemon juice. Check orzo for doneness and chicken for internal temperature (165°F/74°C).
  5. Garnish with chopped fresh parsley. Serve immediately, offering extra lemon wedges on the side for those who enjoy more zest.
