Beef Taco Rice Skillet
A one-pan rice skillet with mild taco seasoning, ground beef, corn, and black beans.
Cooking instructions
- Heat olive oil in a large skillet with a lid over medium heat.
- Brown ground beef for 6 to 8 minutes, breaking it up as it cooks, then drain extra fat if needed.
- Stir in rice, broth, salsa, beans, corn, cumin, and mild chili powder.
- Bring to a simmer, cover, reduce heat to low, and cook for 18 to 20 minutes until rice is tender.
- Turn off heat, sprinkle cheddar over the skillet, cover for 2 minutes, and let the cheese melt.
- Serve with plain yogurt, lettuce, or avocado if your family likes toppings.
